Amsterdam’s old municipal nursery was saved from demolition at the last minute by a Michelin-starred chef with a vision. De Kas—Dutch for greenhouse—is a unique restaurant that features organic herbs and vegetables from its own garden. Seasonal dishes—either vegetarian or combined with meat or fish—draw upon ingredients harvested from the restaurant’s garden and are always of the highest quality.
