Together, siblings Elio, Francesco, and Marina run Checchino, a restaurant originally founded in the 19th century by one of their direct ancestors. He was only allowed to serve wine—until it came time to feed the workers of the slaughterhouse across the way. Today, Checchino attracts residents of Rome and tourists alike; they come primarily to enjoy the coda alla vaccinara, an oxtail stew made by Chef Elio, who interprets Roman cuisine in a particularly striking and appetizing way.
