Born in Finland, Mehmet Gürs is the Turkish answer to Jamie Oliver. In his restaurant on the 19th floor of the Marmara Pera, Gürs puts his own young and unique stamp on Anatolian dishes. For Balık Ekmek fish bread, he wraps sardines with crispy bread, and he serves Turkish ravioli with yogurt and Anatolian raw-milk cheese with honey.
