The Hollmann Salon’s main focus is on organic, regional and seasonal ingredients. This sustainable approach also includes the philosophy that all parts of the animal are to be used. The result is fresh and healthy Austrian cuisine served in an unconventional atmosphere among wood, steel, linen napkins, and candles. Once a month, the restaurant offers the traditional “leftover dinner,” where dishes from the old menu successfully meet the next season’s culinary experiments.
