Hailing from Uruguay, Matias Perdomo has already received a Michelin star for his restaurant, which just opened in 2015. “It’s always a challenge to understand what the guest wants and how to translate that into dishes,” he explains. His revolutionary kitchen is an experiment in new gastronomic territories, fusing together the cuisine of many different cultures. Guests can choose from two prix-fixe menus, one of which consists of eight courses. The other is customised according to the desires of the guest – a truly bespoke dining experience.
