Located directly behind the esteemed Galatasaray High School, Cezayir entertains its guests in a restored school building dating back to 1901. Chef Dilara Erbay has traveled halfway around the world, gaining work experience in Columbia, New York, and on the Galapagos Islands. She has brought spices and inspiration from her travels back to Istanbul, where she has integrated them into her cuisine. Her hamsi, anchovies characteristic of the Black Sea coast, is served as a Latin American ceviche.
