You can’t get more typically London than aqua nueva’s Regent Street location. Perched atop the iconic former Dickins & Jones department store, the restaurant boasts stunning views across the West End. But don’t expect anything too traditional from this British restyling of the worldwide Aqua Restaurant Group. aqua nueva serves up contemporarily Spanish fare from Northern Spain in decidedly modern surroundings. Head chef Alberto Hernandez – who trained with Ferran Adrià at famed elBulli – presides, so you know it’s going to be good.
