In contrast to his first restaurant, Comerç24, Carles Abellán’s tapas bar, located in a cellar vault in Eixample, plays it straight: No experiments! What makes this restaurant so special is its dedication to preserving the Catalan tapas tradition, and of course its focus on the highest quality ingredients. The “McFoie Burger” uses foie gras; the “Bikini,” a seemingly plain ham-and-cheese melt, uses jamón ibérico, which tastes simply out of this world.
